When fire was discovered that’s when cooking started. Cooking, which is defined as preparing food using heat probably began about 250,000 years ago. As centuries rolled on, different cooking methods evolved depending upon the country, culture, resources and the food supply. Cooking methods are also influenced by the individual skills and creativity of the cook. Technology, too, plays a part in the development of cooking methods. As new varieties of food, utensils, transportation and energy were discovered or invented, new and different cooking methods emerged. For instance, more efficient pottery would result in shorter cooking times while better transportation would enable one area to make use of food ingredients found only in other areas. Today molecular gastronomy is part of food science and influences cooking methods in kitchens all over the world.

There are very many methods of cooking, most of which have been known since antiquity. These include baking, roasting, frying, grilling, barbecuing, smoking, boiling, steaming and braising. A more recent innovation is microwaving. Various methods use differing levels of heat and moisture and vary in cooking time. The method chosen greatly affects the end result. Some foods are more appropriate to some methods than others.
